For the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Place all the components into a pot, heat until it reaches a simmer, agitating until the sugar dissolves. Then, turn off the heat allowing it to cool down fully. Decant into an sterilised bottle, seal and refrigerate it chilled, where it will keep for about a month.
For the Premix: Pour all the liquid ingredients into one large bottle, leave to sit for an hour, then strain best through a fine cloth, so it's fully clarified.
To serve: Pour 85ml of your cocktail base into your cocktail shaker filled with ice, and agitate lightly for one minute to cool it down. Strain into a cold coupe glass or equivalent, top with the cranberries adding the final touch using a brief mist with the mandarin essence above the glass.
